Kansas Trip!

33. Visit a state I've never been to.
Since Abby, Jared and Stella will be residents of Maine as of next week, I decided it was really time to do this post! I blogged back when I was there about our first few days and never did the follow up post. It's time....

I loved this porch swing at their house. This is what I did most of my time....relaxed!!! It was so wonderful. I got to catch up on a lot of reading.

Menu Plan MOnday



It's one of my favorite weeks of the year....Halloween is Thursday! Lots of fun things planned with the daycare and Wednesday night will be a Halloween movie night with Katelyn to get us fully in the spirit and ready for Thursday! I always host a party before we go out trick or treating! Enjoy your week!

Monday: Corn & Cheese Chowder
Tuesday: Beef Parmesan
Wednesday: Chicken Fajitas
Thursday: 5th Annual Spooktacular Celebration!
Friday: Takeout :)

iPhoto Friday!

It's been forever! Since that Friday that Jack went into the hospital, I haven't made a Friday post! I had it ready to go last week but forgot to hit publish! It's been such a crazy two months around here but things seem to be settling down and it's nice to be getting back in the routine! We had a great time with friends tonight starting with Halloween on Main St. and ending with pizza at our place :)

  1. We took the boys to Open Gym at Maine Academy last Friday, they love when we go!

4. Loving fall and am sad that I am seeing signs of it ending.
5. We had a fun night over at our friends, The Walters house! LOL, this is towards the end of the night :)
6. Date night for Peter with his Aunt's❤ He went with his Aunt's to the Congin Book Fair and asked to wear a "straight thing". Glad I figured out he meant a tie :)
7. Jack wasn't lonely since Sara came to visit!
8. Was very excited to go to Halloween on main St. tonight, haha.

Jack's Hospital Visit

Never a dull moment for us turned into one of the scariest time I've ever had in my life! A few weeks ago on a Friday morning, Jack woke up gasping for air! I immediately called Pete home from work and we rushed Jack to the ER. They don't mess around when you bring in a 2 year old with difficulty breathing! We went into the critical care section and after an x-ray, 3 nebulizer treatments and a dose of steroids, they had us stay overnight for observation.

Only bright point for him that morning was when he discovered the ambulances right outside his window! 
When we got transferred up to the Barbara Bush children's wing, he asked to call Peter :)
Kristen and the kids made an adorable card for him that day, it was so sweet!

Once he got discharged, he spent the next couple days relaxing at home, which if you know Jack, was not an easy thing to do, haha! A scary time but lucky it all turned out OK!!

Menu Plan Monday

Last night, we made a new meal that is a new favorite. The Chicken & Biscuit Bake is so good and very easy to make! Keeping it simple this week! Enjoy your week :)

Chicken & Biscuit Bake

I was planning on making Lasagna tonight but this is my hubs new favorite meal! I got this from my Mother-in-law. She made this on Tuesday night and we all loved it. Pete requested it again, so I made it tonight! It is super easy, the key to making this meal fast is to already have cooked chicken! I had some in the fridge so it took me less then 20 minutes to put together! This will be in the menu rotation quite a bit :)
Chicken & Biscuit Bake

Ingredients:
3 cups of cooked, shredded chicken(I used 2 chicken breasts).
1 1/2 cups chicken broth or stock.
1/4 cup(half a stick) butter, melted.
2 cups Bisquick.
1 1/2 cups milk.
1 can cream of chicken soup.
1 1/2 cup of mixed veggies(allow to thaw for about 30 minutes before adding to recipe).
3 chicken bouillon cubes.
Pepper

Directions:
Preheat oven to 350. Warm Chicken Stock in a small sauce pan and add bouillon cubes to dissolve. Keep warm until ready to use. Lightly Coat with non-stick spray a 9x13 casserole dish. Pour in melted butter. Layer the shredded chicken on butter. Sprinkle on the veggies.
In a small mixing bowl, combine milk and Bisquick. (It's OK if there are a few lumps remaining). Pour over chicken and veggies. DO NOT MIX!!! Sprinkle on a little black pepper if desired.
Combine the cream of chicken soup with the warmed stock in a small mixing bowl. Once blended, slowly pour over the Bisquick layer. Again DO NOT MIX!! Yes, it will look like a big soupy mess! I promise this is what it should look like and will turn out great! Bake for an hour or until casserole is set and the top is brown and bubbly. Remove from oven and allow to rest for 5 minutes. Enjoy!!
