iPhoto Friday!

Two Fridays in a row and I have this post up early...we'll it's only Friday afternoon :) This week I have a bunch of pics from our fun long weekend!
1. Friday night we went up to have dinner with Papa & Mame.
2. Rain continued on Saturday, so Grammie & I took the boys to see The Croods. Peter is excited for Monsters University to come to theatres!
3. While Pete was enduring rain and dinner up in the Allagash, the boys and I went to the Olive Garden.
4. Jack ready to head up to Nonni's on Sunday!
6. The rain let up for a bit and we headed to Freeport with Nonni, Poppi & my Aunt Patty.
7. We headed to Cyn & Katelyn's for a BBQ after our shopping excursion.
8. Pete had enough rain so came home early. Monday he put a new swing up for the boys.
9. We ended Memorial Day weekend with a cocktail hour hours over at the Brewer's!
10. Peter have a small fever, so he stayed upstairs and talked to his friends down in daycare by walkie talkie, haha!
11. I spent Wednesday evening at a training. I always have a good time with other providers!

Chicken Fajita Sandwich

I love chicken fajitas! When menu planning last week I knew I would have extra hamburger buns & chicken. So I came up with a chicken fajita sandwich. I've only made fajitas on the stove but I wanted to grill the chicken.

So I went online to see what I could find for recipes. I've always just used a store bought package. After making this, I'll always make my own from now on!
The Marinade I made:
  • 1/4 cup lime juice
  • 3 cloves minced garlic
  • 5 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dark brown sugar
  • 1/2 teaspoon kosher salt
  • 3 boneless, skinless chicken breasts, pounded to 1/2-in thick
  • I put it all in the bag and let it marinate for 2 hours.
     
    I cut up and cooked one green pepper & one onion.
    I grilled the chicken & buns.
    I cut up tomato slices and made some guacamole before contstructing the sandwich. It was SO GOOD! The next day for lunch I had some tortilla wraps and made one with those. Another winner!

    Happy Memorial Day! While most will spend the day to enjoy family & BBQ's most importantly, it's a day to remember ALL the service men and women who have given their lives for this country! Thank you to all of those who have served! Enjoy your week :)

    iPhoto Friday

    Are you surprised??!!! It's Friday morning and I have gotten this post done! With ALL this rain this week, I've been able to slow down a bit and get things accomplished!

    1. Early Saturday morning the boys and I headed over to see Kristen before she headed off for her college graduation! I am so proud of her!
     
    2. We then headed over to celebrate Jensen & Lawren's birthday!
    3. Our crazy Saturday continued when we meet up with Mom, Nicole, Gwen Allie, Kelli & Ethan at Funtown.
    4. Jack & I on the Antique Cars.
    5. Sunday morning both boys ended up in our bed and I love it. It won't be like this for long :)
    6. I did the heartwalk with the Wescotts on Sunday morning. Ryan Buotte and I even did some of army training obstacles they had along the 3 1/2 mile walk.
    7. Peter finished his preschool year yesterday.
    8. I am one proud Momma!

    Funtown Opening Weekend

    I'm finally getting this post done, almost two weeks later! For Christmas, Nonni & Poppi got us season passes to Funtown. Peter was extremely excited to go to opening weekend! Nonni, Poppi, Alli & Gwen joined us for opening day. Now that Peter and Gwen are taller, we got to experience a bunch of new rides with them that they loved!

    He is now tall enough to ride the go carts! He is a happy boy!

    Since Pete had to work, I decided to take the boys on Mother's Day. Laura and Lola joined us and we had another great day!

    Well it looks like rain. ALL week. Awesome. I am hosting the daycare families on Tuesday for a BBQ and I'm keeping my fingers crossed. That day looks like the best day of the week. I'm already thinking of the long weekend we have coming up, haha! Enjoy your week.

    iPhoto Friday!

    Wow, another week has flown by! I am still behind on posts! This weekend I'll be posting last weekend's Funtown opening weekend fun and Gwen, Allie & Nicole's visit from April!!! I just need a few more hours in each day, hahaha!

    1. After our day at Funtown we headed over to Tumble Tikes to celebrate Landon's 4th birthday!
    2.Pete has been working a ton the last few weeks so the boys were enjoying some snuggle time with him.
    3. Wednesday we decided to go the the new Five Guys that opened by the mall. We were all happy with that decision!
    4. Last night Kristen and I, along with my friend Nicole, headed to Saco for the Scholastic Book Warehouse sale. It happens every May and I LOVE getting new books for the daycare!
    5. I love this cute pic of Jack and Liam, one of the daycare kids, from our walk this morning.
    6. Today at 4:30 we headed to Wendy's to get a frosty. Why?! Because it's Friday :)

    Menu Plan Monday

    What a great, busy Mother's Day weekend we had!! We hit the ground running on Friday night and didn't stop until we pulled into our driveway at 7:30 last night! I'll be doing my grocery shopping for the week tonight after Peter goes to big bat! I hope all you Mom's had a nice day yesterday! Since I now have my bed frame, I am a happy Mom! Enjoy your week :)

    Our Bed Frame


    7 years ago, I saw this bed in the IKEA catalog and told Pete that I wanted to buy it. We were renting our first home together in Falmouth. "Hun, I can build if a bed if you want, it would be much more quality then this!" I was so excited! He went out and got the wood and made the bed frame. "All I need to do is put poly on it."..........7 years ago.
     
    
     It sat in our garage on Roberts street for a year. Then it was placed in Pam & Joe's garage for the year when we lived with them. This is where the bed frame has sat for the last 5 years........our garage.
    So one evening in bed  a few weeks back when yet another comforter was ripped from our bed frame, I got a "little" iterated and mentioned I was going to buy a new frame in the morning. "Why don't I finish the one in the garage?"  he said. "Oh, you mean the one I've been asking about for the last 7 years?! Great idea, I'll belive when I see it!" Well he got to work! Sanding it down.

    Yesterday, since he today is spending the day working, he set it up for me so I could have it on Mother's Day. It was all I wanted!

    This is the after. My "it took 7 years, made with love, I nagged him quite a bit" bed frame.   I absolutely love it!! Thanks hun. Now onto matching nightstands.... I think I'll just take a trip to the Mill Store for those, hahaha.
