Menu Plan Monday

I LOVE long weekends! Right now I'm still in my PJ's relaxing on the couch with my laptop and tea. The boys are playing happily and I just put a batch of my Mom's holiday oyster crackers in the oven! We're off soon to the Veteran's Day parade in Portland to honor those who serve this country past & present! Enjoy your week :)

Monday: Ribs & Rice
Tuesday: Cheeseburger Pie
Wednesday: Guacamole Bacon Grilled Cheese
Thursday: Cilantro Lime Chicken in crockpot

Chicken & Biscuit Bake

I was planning on making Lasagna tonight but this is my hubs new favorite meal! I got this from my Mother-in-law. She made this on Tuesday night and we all loved it. Pete requested it again, so I made it tonight! It is super easy, the key to making this meal fast is to already have cooked chicken! I had some in the fridge so it took me less then 20 minutes to put together! This will be in the menu rotation quite a bit :)
Chicken & Biscuit Bake

Ingredients:
3 cups of cooked, shredded chicken(I used 2 chicken breasts).
1 1/2 cups chicken broth or stock.
1/4 cup(half a stick) butter, melted.
2 cups Bisquick.
1 1/2 cups milk.
1 can cream of chicken soup.
1 1/2 cup of mixed veggies(allow to thaw for about 30 minutes before adding to recipe).
3 chicken bouillon cubes.
Pepper

Directions:
Preheat oven to 350. Warm Chicken Stock in a small sauce pan and add bouillon cubes to dissolve. Keep warm until ready to use. Lightly Coat with non-stick spray a 9x13 casserole dish. Pour in melted butter. Layer the shredded chicken on butter. Sprinkle on the veggies.
In a small mixing bowl, combine milk and Bisquick. (It's OK if there are a few lumps remaining). Pour over chicken and veggies. DO NOT MIX!!! Sprinkle on a little black pepper if desired.
Combine the cream of chicken soup with the warmed stock in a small mixing bowl. Once blended, slowly pour over the Bisquick layer. Again DO NOT MIX!! Yes, it will look like a big soupy mess! I promise this is what it should look like and will turn out great! Bake for an hour or until casserole is set and the top is brown and bubbly. Remove from oven and allow to rest for 5 minutes. Enjoy!!

Menu Plan Monday

The second Monday we wake up to rain. We have plans to spend our last day of summer going out to breakfast and then onto Funtown with friends, but now Funtown is closed for the day! We'll at least enjoy a good breakfast out, who knows where the day will take us!!! Last week all the kids came back full time and I didn't have a minute to menu plan. I should of! It was such a busy week and it made me realize how much menu planning helps our family!

This is my lunch most days, once the kids are asleep is when I get a minute to eat my lunch!

Monday: Buffalo Chicken Lasagna
Tuesday: Waikiki Meatballs
Wednesday: Pizza Club with Sullivan's & Varney's!
Thursday: Chicken Lo Mein
Friday: take out :)

Menu Plan Monday

Well...it's time to start cooking! I haven't cooked a dinner in two weeks until last night!!!! With my sisters up on vacation the first week and us on vacation this past week, it just didn't happen. It was nice to fall back into the routine. Speaking of fall, this week is really my last week of summer before I go back full time! Thankfully the forecast is going to be BEAUTIFUL! In the 80's all week! While I was looking over the cookbooks yesterday Pete came into the room and I asked if he felt like any particular meal. His reply..."Let's grill all week!" Great idea! We need to embrace this weather as long as we can! Enjoy your week :)

Chicken Spaghetti

I wrote this for post as a guest poster on Mindi's blog over a year ago! When my husband was just looking through some of my blog pics, he mentioned that he wanted this for dinner this week. It was then that I realized that I never shared this recipe on my blog! Enjoy :)
I am a HUGE fan of the Pioneer Women(maybe she'll invite me to her ranch someday....Call me Ree, haha)! Her Corn and Cheese Chowder is one of our favorites! My husband does just as much of the cooking as I do, so when I got her cookbook from the library, he was the first one to go through it and found this recipe. I love anything with pasta, so I was looking forward to making this. We make a few quick changes due to what we had at home, our changes are in red below. This recipe did not dissapoint!

Prep Time: 30 Minutes
Cook Time: 45 Minutes
Difficulty: Easy
Servings: 8

Ingredients:
■1 "Cut Up Fryer" (Basically, one chicken that’s been cut into pieces)
2 cups Cooked Chicken
■3 cups Dry Spaghetti, Broken Into Two Inch Pieces
2 cans Cream Of Mushroom Soup
1 can Cream Of Mushroom Soup
1 can Cream Of Chicken Soup
■2 cups Grated Sharp Cheddar Cheese
■1/4 cup Finely Diced Green Pepper
1 jar (4 Ounce) Diced Pimentos, Drained
1/4 cup Finely Diced Tomato
■1/4 cup Finely Diced Onion
2 cups Reserved Chicken Broth From Pot
2 cups Chicken Broth
■1 teaspoon Lawry's Seasoned Salt
■1/8 teaspoon to 1/4 Teaspoon Cayenne Pepper
■ Salt And Pepper, to taste
■1 cup Additional Grated Sharp Cheddar Cheese

Shred chicken to make two cups......
While pasta is cooking, chop up green pepper, tomato & onion.
When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar.
Place mixture in casserole pan and top with remaining sharp cheddar.
Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).
This meal was so good!!! We all agreed(Jack by the amount he ate) that this will be one to cook again soon! The daycare kids had some the next day and they all liked it! I actually thought it was better reheated! Add this to your list to try :)

Korean Grilled Beef

I feel like I haven't shared a recipe in a long time. We're adding this to our menu rotation! Pete found this in the American Profile magazine, that comes in our local paper on Thursdays. It was so good and extremely easy to make!

Korean Grilled Beef

Marinade:
     1 cup soy sauce
     1/2 cup rice vinegar
     1/2 cup mirin(sweet rice wine)
     1 bunch green onions, finely chopped
     1/4 cup finely chopped fresh ginger
     2 tablespoons toasted sesame oil
Beef:
     2 pounds rib eye or flank steaks, 1 inch think
     1 teaspoon coarse salt
     1 teaspoon freshly ground black pepper

Directions:
   1. Prepare marinade, combine all ingredients and mix well in zip loc bag. Add beef and refrigerate
       2 to 24 hours.
   2. Heat grill. Remove beef from marinade and pat dry. Sprinkle with salt and pepper.
   4. When grill is hot, place beef on grill rack. Cook 3 to 4 minutes total, until desired doneness is
        reached. Remove from grill and let rest 10 minutes before slicing thinly against the grain.

We enjoyed our beef with asparagus & rice.

Chicken Fajita Sandwich

I love chicken fajitas! When menu planning last week I knew I would have extra hamburger buns & chicken. So I came up with a chicken fajita sandwich. I've only made fajitas on the stove but I wanted to grill the chicken.

So I went online to see what I could find for recipes. I've always just used a store bought package. After making this, I'll always make my own from now on!
The Marinade I made:
  • 1/4 cup lime juice
  • 3 cloves minced garlic
  • 5 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dark brown sugar
  • 1/2 teaspoon kosher salt
  • 3 boneless, skinless chicken breasts, pounded to 1/2-in thick
  • I put it all in the bag and let it marinate for 2 hours.
     
    I cut up and cooked one green pepper & one onion.
    I grilled the chicken & buns.
    I cut up tomato slices and made some guacamole before contstructing the sandwich. It was SO GOOD! The next day for lunch I had some tortilla wraps and made one with those. Another winner!

    Menu Plan Monday



    It's Patriot's Day, whick means the hubs and I get to enjoy a long weekend! We had a great weekend, enjoying Saturday with the boys and going out on Saturday night with Ben & Bethany. Sunday, 8 of of piled into the van to head to Waterville to visit our nephew Cameron on his birthday for which I made a batch of Chicken & Rice soup. Today our goal is to clean out the garage and buy a new grill! I have a feeling this week will fly by with my sister, Nicole and my nieces coming to stay with us Thursday & Friday night! Enjoy your week :)

    Parmesan Chicken Bites

    These are good! Really good! I came up with these a few years ago for the daycare kids. I sometimes make them for us for dinner as well. It's a meal that is always a hit with kids!

    
    I set up three trays. I don't measure anything out, I just eyeball it all. The first one has flour, salt & pepper. The second one has egg and the third one has a mix of  seasoned breadcrumbs, panko breadcrumbs, parmesan cheese and a few sprinkles of Tastefully Simple Garlic, Garlic. 
    I cut up chicken breast into small pieces.
    Starting the process.
    I put some oil into the pan, turn it on low, let it heat up and drop in the chicken. On the days where I make them for the daycare, I put them into the oven to bake. A little healthier and easier to cook!

    Menu Plan Monday - Taste of Home Inspired!

    Last week, I received my Taste of Home magazine in the mail! It one of my favorite magazines! I was looking through it and bookmarking recipes I wanted to make when I realized I could do a whole week of meals just from this issue! Last night I made the Buffalo Chicken Lasagna, pictured above. It was a hit! Who else subscribes to Taste of Home?

    Steak Breakfast Skillet

    I've never liked eggs but I've always LOVED going out to breakfast. I use to alway just get homefries and toast until I discoved this meal! I now ask every time we go out  if they make this! We enjoy eating breakfast for dinner so I thought I would give a try and re-create something like it at home. It was a hit!

    1. Prepping the vegetables. I cut up one onion, one green pepper and one tomato.
    2. Using some olive oil, I cooked the peppers and onions until tender.
    3. I then added a half pound of pub style shaved steak and tomates. I seasoned the steak with onion powder, garlic powder, salt & pepper.
    Smelling good!
    4. After the steak was cooked, I added a pound of diced homefries.
    5. After covering the top with a layer of cheese, I put it in the oven at 350 until melted.
    We made some eggs to got with this. This is Pete's plate.(remember what I said about eggs, hehe)
