Friday iPhoto Dump!

Our week has been a busy one.....
 
1. Saturday, Pete and I help his Dad and sister remove a ton of brush into the wood chipper. This weekend we'll be spilting the wood for the wood stove!
2. Gwen & Allie spent the weekend at Nonni & Poppi's so we got to spend some time with them :)
3. My Aunt Patty came up from MA on Tuesday so I headed up to my Mom's for a girls night!
4. Our new couch arrived! This is where you will find Pete every Sunday until Feb. haha!

5. My Dad came over on Thursday to fix the backyard, yay! The boys LOVED watching!

6.7.&8. Yesterday, I took a couple hours off in the morning so I could spend some quality time with my boys :) We went to Deering Oaks to play on the playground and feed the ducks. We all had a great morning, love being able to spend time like that with them.

Upta Camp

The first weekend of our vacation, we spent it up at camp with family. We have done that for the last few years, getting a chance to hit up the New Balance tent sale and the Skowhegan Fair!

Tomato Pasta Stoup


I got a ton of old Rachel Ray magazines from my Mom the other day, and I spent Sunday evening going through them all and pulling out recipes that I would want to try. When I saw this one, I knew it would be perfect for the daycare kids. Soups are really messy for the young ones so when I make Chicken Soup, I always add more rice so that it absorbs more of the liquid making it easier for the kids. Well this one was perfect for them!
 
You only need a few ingredients!

Mince up 1 cup each of celery, carrot and onion. In a large pot cook veggies in 2 tbsp of EVOO until tender.
Add 4 cups of vegetable broth and 1 15 oz. can of tomato puree; bring to boil. Add 2 cups of ditalini and cook to al dente; season with salt and pepper.
Serve sprinkled with grated parmesan cheese!

Menu Plan Monday


We've had a wonderful summer! I can't believe Saturday will be September for two reasons...1) Is it really going to be September?? 2) Our sweet friend Mackenna turns 1! Wasn't she just born?! I love summer....friends, BBQ,and time with family on the lake. But I LOVE fall...apple picking, leaves falling, and football parties. The addition wil be done this week, how exciting!!!  If you didnt' see my post from yesterday, you really need to try the Make-Ahead Muffin Melts! Enjoy your week!

Monday: Waikiki Meatballs
Tuesday: Girls night for me with my Mom, Aunt & cousin! Boys are on their own :)

Make-Ahead Muffin Melts


Another fablous meal from The Pioneer Woman! This morning we were having Nonni, Poppi, Gwen & Allie over for breakfast. I was just going to make some eggs, pancakes and bacon when Pete suggested we make something from TPW cookbook. Good idea Pete! They were a hit, I recommend making these soon!!

I always cook my bacon in the oven! So much easier!

Pioneer Woman Make-Ahead Muffin Melts

Ingredients:
  • 12 whole Hard-boiled Eggs, Peeled And Chopped
  • 2 cups Grated Cheddar Cheese
  • 1 cup (Real) Mayonnaise
  • 12 slices Bacon, Fried And Crumbled
  • 1 Tablespoon (heaping) Dijon Mustard
  • 1/2 teaspoon Garlic Powder
  • 3 dashes Worcestershire Sauce
  • 6 whole English Muffins Split

  • Directions:
    1. Combine eggs with all other ingredients. Fold together gently.  You can cover and store in the fridge overnight.
    2. Spread on English muffin halves, then broil for 3 to 5 minutes or until hot and bubbly
    3. We Pete put them under the broiler for one minute before we put the mix onto the muffins to make them a bit more crispy. Good decision :)
