Ribs n' Rice

This was my Grammie Murphy's recipe that my Aunt Joanne gave me. When I would go down to visit my grandparents, we ALWAYS had spaghetti and meatballs.  I would be disappointed if we didn't! So it was great to learn after she passed away that this recipe of hers that was a family favorite! It has now become a favorite of Pete and I! Thanks for passing this along to us Aunt Joanne!
 
RIBS & RICE RECIPE   
 Preheat oven to 350 (3 hours cooking time total)
Remove membrane from back of baby back ribs. Slice up into individual ribs. Place ribs in a roasting oven pan (size depends on how many ribs are being cooked).  I use a ceramic baker from Pampered Chef.
  Cover with foil. Cook 2 hours (toss ribs at 1 hour mark). 
Remove ribs from pan and pour out juices (fat). Return ribs to pan.
Add sauce(recipe below) covering the ribs; return to oven for 1 hour
(coat ribs with sauce 1/2 way through).
 
Make sauce approx. 1 1/2 hours before ribs are done.
The sauce recipe is ideally for one rack of baby backs. Double it up for 2-3 racks.
 
Sauce:
1 tblsp olive oil
1/2 cup of finely chopped onions
small can of tomato sauce (8 oz)
3/4 can of water (from can of tomato sauce)
1/4 cup of ketchup
2 tblsp brown sugar
1 1/2 tblsp worcestershire sauce
2 tblsp white vinegar
1 tsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
3 shakes of paprika
 
Saute oil & onion in small saucepan until onion is translucent. Add all remaining ingredients. Simmer on low until 1 hour before ribs are done. Add sauce to ribs. Serve over white rice, Enjoy!

Friday iPhoto Dump!

Last week I couldn't post due to the blogger issues I was having, We've had a lot of fun since last Friday :) I took a bunch of pictures of our trips to the fair, so that will be a separate post. Here is our week......

 4. Papa Rick surprised the boys with two new monster truck Bobcats each! They were VERY excited!
 
 5. Peter found out Thursday morning when he got to school that he was going to be leader that day. Can you tell he was excited?!?!

Stuffed Peppers

My sister Laura was the one who told me about this recipe and I have been meaning to post it since last December, oops! I made these the first time for our Christmas Eve eve celebration.  When we went to the farmer's market a few weeks ago and saw many of the items I needed, I decided to make
them. They are a great meal to use when entertaining!
I used the tops to make mini ones for the boys

Stuffed Peppers

I made some changes

INGREDIENTS
4medium-large sweet peppers (2 red, 2 orange)
 1/2 pound bulk sweet Italian sausage
1/2 pound ground beef
1/2cup extra-long grain white rice, par-cooked in salted water 7 minutes; drain, rinse in cold water, drain again.
1/2cup fennel bulb, diced
1/2onion, diced
1/2Tablespoon chopped fresh oregano
1‑1/2cup shredded provolone
1‑1/4cup tomato sauce, divided*
6Tablespoons Breadcrumbs
Olive oil
Salt, if needed
 
 
PREPARATION:
  1. Slice tops from the peppers. Clean out seeds and pith. Set a large pot fitted with a steamer basket over high heat to boil. Place in the peppers, upside down. Cover pot, reduce heat to a simmer and cook 5 minutes. Remove peppers to a paper-lined platter to drain and cool while preparing the filling.
  2. Preheat oven to 350°. Heat a medium sauté pan over medium heat. Glaze with a slick of oil and add the sausage, cooking, until brown and crumbled. Add the fennel and onion, stirring over medium low heat until translucent and soft. Remove to a bowl and let cool. Add the rice and fold in. Add the oregano, provolone and 1/2 cup tomato sauce; combine well. Check seasoning and correct if needed.
  3. Lightly oil a 9" x 13" ceramic baking dish, or vessel with similar capacity. Glaze bottom with some of the remaining tomato sauce. Cut the peppers in half, lengthwise. Divide sausage filling evenly between the pepper halves. Place filled peppers in the baking pan. Top each with some remaining tomato sauce and finish with breadcrumbs.
  4. Bake until hot all the way through, about 30 minutes.

Mackenna's Monkey Party




A few weeks ago, we headed over to Ben & Bethany's to celebrate Mackenna turning one! It was a monkey themed party!

Camp Time!

We got a chance to get up to camp this past weekend and brought Ben, Bethany & Mackenna with us. Our plan was to go apple picking but the weather had other plans. What ended up happening was a very relazing weekend :)

Peter Starts Preschool

This Tuesday Peter started preschool at Prides Corner Nursery School. He has Mrs. Lessard, who was my neighbor for 15 years growing up, so I think it's great that he has her.
Jack wanted a picture with Peter but I knew if I let him come outside with us, he would think he got to go to school also!
