Foliage & Farmington

Last week we went up to Nicole's in-laws house and surprised her with a small "sprinkle" for Allie.

On the ride there and back, I enjoyed the foliage so much! It is such a beautiful ride in the fall!

I was almost home when I found out Nicole was in the hospital. She was feeling sick when I was leaving and got worse, so Nate took her in and they wanted to keep her overnight so they could monitor her and the baby. I got home and packed the diaper bag again so we could head back up the next day. 

On Monday, with Nicole in the hospital, the boys and I drove back up early. After a visit to Nic, Laura and I went back to her house to help with Gwen and decided to walk downtown since it was such a beautiful day!

Our 4th Anniversary

On Friday, Pete and I celebrated our 4th wedding anniversary!

I got a lovely surprise when roses showed up at the house that day! I was really looking forward to going out! Our first and third anniversaries I was pregnant and SO sick!! Our second anniversary, Peter was sick with a 102 fever so we got takeout and comforted our sick baby. Finally with number 4, babysitter!

We started our evening with drinks at Grace. We sat at the upstairs bar and had a great view of the place.


We had dinner reservations at The Corner Room. It's the third "room" restuarant.  We got sat at the antipasto bar.... the couple next to us were celebrating  their 22nd wedding anniversary! They were really nice and we ended up having a very nice evening with them. The food was AMAZING! I loved every bite! We had a great experience sitting at the bar watching all the food get made and the chef who I assumed was the salad chef, ended up being the owner! He was so nice, took our picture, answered all our questions about food and made our dinner so enjoyable! We'll be going back again!

Menu Plan Monday

Woo Hoo, I love when I get an extra day off! Thanks Mr. Columbus :) I am headed up early to Farmington today to see Nicole, we were also there yesterday... but that's all I'm going to say :) So'll we'll be doing an easy dinner tonight when we get back. I'm looking forward to trying a couple new recipes this week. Everyone have a great week!

Chicken and Rice Soup

On Saturday night when I arrived back home from NEC, I was still cold from being out in the cold all day. I remembered I had just starred a recipe for soup in my google reader from the blog, Picky Palate. So glad I made this, it was really good! Warmed me right up!

Classic Chicken and Rice Soup


2 Tablespoons extra virgin olive oil
1 medium onion, finely chopped
1 tablespoon minced garlic
3 stalks celery, chopped
3 medium carrots, peeled and chopped
3 cups cooked, shredded chicken
7 cups chicken broth
2 cups cooked white rice
1 tablespoon whole grain Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup finely chopped fresh parsley

1. Heat oil in large Dutch oven or pot over medium heat. Add onions, and cook stirring until tender, about 5 minutes. Add garlic and cook, stirring for 1 minute. Add celery and carrots, cooking and stirring until tender, about 5 minutes. Add chicken, chicken broth, rice, Dijon, salt, pepper and parsley. Stir and reduce heat to low. Let simmer until ready to serve.

Makes 8 servings

Alumni Weekend

aahh, Henniker. I love this place! It's hard to believe I first arrived at NEC 14 years ago. This past weekend was my 10 year reunion. I was looking forward to going back and seeing friends I hadn't seen in awhile. It was my first time back in 4 years and it brought back so many memories as I drove into town.

Jill is now the head coach for the Women's lacrosse team so I headed to check out her office! When then headed over to the new alumni building to register for the weekend.

On Friday night NEC held the athletic hall of fame dinner. My teammate and good friend Jamie was getting inducted and it was great to be there for her. The Men's lacrosse team from 1999 & 2000 also got inducted and it was great to see many good friends from those days. It crazy how we've all changed in 10 years.

After the dinner, a bunch of us headed over to the pub. The pub was never that popular until my junior year when Dave & Drew started bar tending there. My senior year they started this wall where you could sign your name. It was neat to see it again and cool to see how how far the signatures extend now.
Smock and I signed our names together of course!

Jill convinced Ame and I to get our butts out of bed after 4 hours of sleep to run the alumni 5K race.
We decided around mile .2 that we would rather take pictures while running then keep up with the pack :)
At mile 1 we decided to take a left off course to grab a bagel and some tea before the alumni game!

After the game we headed to watch the guys alumni lax game but it started raining again so we only stayed for a few minutes. The rain was really putting a damper on things. After some time in Jill's office, some of us girls headed over to the BBQ in the tent.. how cute is Baldwin's son Callum?

We then headed back down to the turf field to watch the men's soccer game but it was really starting to pour. I had orginally planned to stay Friday and Saturday night but the weather was really not fun.We decided to call it a day and all headed home. It was great to see college friends and see how our lives have changed in 10 years. We almost all now are married and have kids.. we come a long way!

I had a fun weekend in Henniker! It was my 10 year college reunion..boy have I gotten old! After a great time with college friends, it back to the real world and a yummy week of meals! Made a good Chicken Soup yesterday that I'll be posting this week! Can you believe it's already October?!?! Have a great week everyone!

Beef Stew


I have the cookbook Fix and Forget It for my crockpot. I have many recipes that I like and many that we haven't even tried yet. This one is a great find. I started this in the morning and kept it on low for a little over 10 hours. The beef was tender and the veggies cooked perfect. We really enjoyed this meal, we'll have it often over the winter!!

2 lbs. beef chuck. cubed
1 tsp. Worcestershire sauce
1/2 cup flour
1 1/2 tsp. salt
1/2 tsp. pepper
1 tsp paprika
1 1/2 cups beef broth
half garlic clove, minced
1 bay leaf
4 carrots, sliced
2 onions, chopped
1 rib celery, sliced
3 potatoes, diced

Directions
1. Place meat in slow cooker
2. Combine flour, salt, pepper, and paprika. Stir in meat until coated
thoroughly.
3. Add remaining ingredients. Mix well.
4. Cover and cook on low 10-12 hours or on high 4-6 hours. Stir before
serving.
