Menu Plan Monday- Taste of Home

What a beautiful weekend!! We started it by having friends over for a BBQ and ended it with our Tour de Dads gettting to see most of our family yesterday. The weather was good, I got some projects done around the house and we got to enjoy Cynthia & Katelyn's housewarming party on Saturday. I got my Taste of Home magazine a few weeks back and since the last time I did my TOH menu plan, I got great feedback, I'm doing it again! Enjoy your week :)

iPhoto Friday!

This week was a great week. It was not crazy scheduled and we got to enjoy our time!

1. Saturday evening Pete and I had a great time at his cousin Kurt's wedding.!
2. On Tuesday, Peter got to meet NASCAR Nationwide series Parker Klingman & Alex Bowman. He was so excited! 
3. In an attempt to declutter and organize I got rid of a ton of books!
4. I discovered on Wednesday that Peter took 52(Yes, 52, I counted) selfie's on my phone, haha!
5. Yesterday we took a walk to the horse farm. Jack and his buddy Bryce.
6. It took awhile but I finally got a new otterbox. 
7. Last night we went over to Cyn & Katelyn's to help with party prepping for their housewarming party on Saturday. Pete & the boys built them a ladder golf game.

Korean Grilled Beef

I feel like I haven't shared a recipe in a long time. We're adding this to our menu rotation! Pete found this in the American Profile magazine, that comes in our local paper on Thursdays. It was so good and extremely easy to make!

Korean Grilled Beef

Marinade:
     1 cup soy sauce
     1/2 cup rice vinegar
     1/2 cup mirin(sweet rice wine)
     1 bunch green onions, finely chopped
     1/4 cup finely chopped fresh ginger
     2 tablespoons toasted sesame oil
Beef:
     2 pounds rib eye or flank steaks, 1 inch think
     1 teaspoon coarse salt
     1 teaspoon freshly ground black pepper

Directions:
   1. Prepare marinade, combine all ingredients and mix well in zip loc bag. Add beef and refrigerate
       2 to 24 hours.
   2. Heat grill. Remove beef from marinade and pat dry. Sprinkle with salt and pepper.
   4. When grill is hot, place beef on grill rack. Cook 3 to 4 minutes total, until desired doneness is
        reached. Remove from grill and let rest 10 minutes before slicing thinly against the grain.

We enjoyed our beef with asparagus & rice.

iPhoto Friday!

After dinner out at Buffalo Wild Wings, we're all enjoying this rainy Friday night after a busy week....
1. A sinkhole happened across the street at 7pm last Friday night. 
2. After the Together Days parade, we headed over to Grammy & Grampy's pool!
3. Peter fell asleep on my leg Saturday night :)
4. Pete attempted it spread the loam with the "help" of the boys...it didn't go so well!
5. After a call to Papa Rick to use his magic on the bobcat, seed and hay done by Pete..the backyard looked like this, yay!
6. Peter had his last session of big bat on Monday night.
7. He had the largest cheering section :)
8. Kristen & Jack down in the daycare!
9. Up at Nonni & Poppi's on Wednesday night, Peter caught 2 fish!
10. After 3 years. one of my favorite families(and Peter's bestie) left my daycare. We have quite a few summer plans with them!
11. How we're spending our Friday night :)

Menu Plan Monday


What a beautiful weekend! We enjoyed every minute of it and got a lot accomplished! On Saturday I received my new Taste of Home magazine and planned to do my theme menu plan. However, yesterday I took a look at our week and realized that I am going to need to wait until next week for that. We have Peter's last Big Bat session tonight, and a daycare family is leaving and will be staying on Thursday for dinner & drinks. Enjoy your week, ours, like always, is a busy one :)

iPhoto Friday!

Two Fridays in a row and I have this post up early...we'll it's only Friday afternoon :) This week I have a bunch of pics from our fun long weekend!
1. Friday night we went up to have dinner with Papa & Mame.
2. Rain continued on Saturday, so Grammie & I took the boys to see The Croods. Peter is excited for Monsters University to come to theatres!
3. While Pete was enduring rain and dinner up in the Allagash, the boys and I went to the Olive Garden.
4. Jack ready to head up to Nonni's on Sunday!
6. The rain let up for a bit and we headed to Freeport with Nonni, Poppi & my Aunt Patty.
7. We headed to Cyn & Katelyn's for a BBQ after our shopping excursion.
8. Pete had enough rain so came home early. Monday he put a new swing up for the boys.
9. We ended Memorial Day weekend with a cocktail hour hours over at the Brewer's!
10. Peter have a small fever, so he stayed upstairs and talked to his friends down in daycare by walkie talkie, haha!
11. I spent Wednesday evening at a training. I always have a good time with other providers!
