Easter Bunny Adventure

This post was suppose to be before Easter, but you know how life is! On the Thursday before Easter, my Mom and I took the kids to see the Easter Bunny. In December it took a couple times of seeing Santa before he got on his lap, and I managed to get a photo. I thought since Peter likes animals he would like E. Bunny... yeah not so much. Jack on the other hand, did great. He never even woke up, haha! We'll try again next year!

Rosemary Roasted Chicken with Potatoes
In a move to simplify things, my friend Dianna told me about McCormick Recipe Inspirations. They have many and we bought a couple but this is the one we liked best. We have these spices in the cupboard so I saved the recipe card and will be cooking this again!
prep time: 15 minutes
cook time: 30 mintues
2 tsp. Paprika
1 1/2 tsp. crushed rosemary leaves
1 tsp. minced garlic
1/2 tsp. coarse ground black pepper
1 tsp. salt
2 tbsp. olive oil
6 bone-in chicken thighs, skin removed (about 2lbs.)
1 1/2 lbs. small red potatoes, cut into 1 inch cubes
1. Mix oil and all of the spices in large bowl. Add chicken and potatoes; toss to coat well. Arrange chicken and potatoes in single layer on foil-lined baking pan sprayed with no stick cooking spray.
2. Roast in preheated 425F oven for 30 minutes or until chicken is cooked through and potatoes are tender.

Happy Easter!!
We headed up to Nonni & Poppi's bright & early today for an egg hunt and breakfast!

After leaving Nonni & Poppi's, we headed to Memere & Pepere's for a late brunch and another egg hunt. The Wescott clan was all there along with the Webster & Wood families.

National High Five Day
Many of you,well anyone that was at our wedding, know that Pete and I have a high 5 history. At the end of our first date, Pete high fived me as I was getting out of the car. Yes, I was surprised by it also. I went into the house and told my sister how the date did not end with a kiss but a high five! It was a running joke after that! So it was only appropriate that we high fived at our wedding after our first kiss. I really wish we had a photo of that moment, we don't even have a photo of our first kiss (I'm still sad about both).

Two Kisses for Maddy Book Review

About the Book:
Matt and Liz Logelin were high school sweethearts. After years of long-distance dating, the pair finally settled together in Los Angeles, and they had it all: a perfect marriage, a gorgeous new home, and a baby girl on the way. Liz’s pregnancy was rocky, but they welcomed Madeline, beautiful and healthy, into the world on March 24, 2008.

My Thoughts;
I started crying reading the forward. It is a love story. It is a life story. The raw emotions and limitless love made me laugh and cry all way through. I laughed reading about Matt navigating his way through fatherhood and I cried because he made Liz so alive in the pages you felt the pain of what she was missing out on. It made me wish I had been her friend. It shows you the power of love in life and death. The book made me feel truly lucky for what I have.
I started reading his blog about two years ago and even though I knew the story, it was still a wonderful book. If you get a chance, check out the Liz Logelin Foundation.

Gotta Love A Gator!
On Sunday morning we headed to Walmart to pick it up. He was so cute when he saw the box being loaded onto the truck. When we got home, he was ready to put it together!!
