Menu Plan Monday

Hello Monday! A fun, , relaxing, productive weekend has come to an end. Saturday night we had a fantastic experience at Hugo's in Portland. We went with Emily & Kenny Walters and enjoyed a 3.5 hour tasting experience! Our last course was one we all could share. A 90 day aged Rib eye steak that was out of this world!
My Smore dessert, it was so good!!

Monday: Girls night for me, Omelets for the boys!
Tuesday: Chicken Spaghetti
Wednesday: Turkey Burgers
Thursday: Orange Beef Stir Fry
Friday: Take-out :)

Chicken Spaghetti

I wrote this for post as a guest poster on Mindi's blog over a year ago! When my husband was just looking through some of my blog pics, he mentioned that he wanted this for dinner this week. It was then that I realized that I never shared this recipe on my blog! Enjoy :)
I am a HUGE fan of the Pioneer Women(maybe she'll invite me to her ranch someday....Call me Ree, haha)! Her Corn and Cheese Chowder is one of our favorites! My husband does just as much of the cooking as I do, so when I got her cookbook from the library, he was the first one to go through it and found this recipe. I love anything with pasta, so I was looking forward to making this. We make a few quick changes due to what we had at home, our changes are in red below. This recipe did not dissapoint!

Prep Time: 30 Minutes
Cook Time: 45 Minutes
Difficulty: Easy
Servings: 8

Ingredients:
■1 "Cut Up Fryer" (Basically, one chicken that’s been cut into pieces)
2 cups Cooked Chicken
■3 cups Dry Spaghetti, Broken Into Two Inch Pieces
2 cans Cream Of Mushroom Soup
1 can Cream Of Mushroom Soup
1 can Cream Of Chicken Soup
■2 cups Grated Sharp Cheddar Cheese
■1/4 cup Finely Diced Green Pepper
1 jar (4 Ounce) Diced Pimentos, Drained
1/4 cup Finely Diced Tomato
■1/4 cup Finely Diced Onion
2 cups Reserved Chicken Broth From Pot
2 cups Chicken Broth
■1 teaspoon Lawry's Seasoned Salt
■1/8 teaspoon to 1/4 Teaspoon Cayenne Pepper
■ Salt And Pepper, to taste
■1 cup Additional Grated Sharp Cheddar Cheese

Shred chicken to make two cups......
While pasta is cooking, chop up green pepper, tomato & onion.
When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar.
Place mixture in casserole pan and top with remaining sharp cheddar.
Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).
This meal was so good!!! We all agreed(Jack by the amount he ate) that this will be one to cook again soon! The daycare kids had some the next day and they all liked it! I actually thought it was better reheated! Add this to your list to try :)

iPhoto Friday!

We are off soon to Ben & Bethany's to BBQ but wanted to get this post done before we went!
 
1. I had a FANTASTIC weekend with some of my college friends to celebrate Jamie's bachelorette weekend! We had a lot of fun at the KOA in Saco!
2. While I hung with the girls on Saturday, Pete took the boys to Scarborough Beach!
3. A fun Saturday night!
4. Kristen & I took the daycare to Smiling Hill Farm on Monday.
5. Being silly.
6. We got a new fence on Wednesday and finished the backyard play area! Loving the yard fenced in!
7. Wednesday night, Pete and I went to Graze at Pineland Farms and got a tour of Olivia's Garden.
8. We had a great time and would love to go again!
9. Haircuts on Thursday!
10. Jack didn't enjoy it as much as Peter!
11. We have Bela visiting for the weekend!

Menu Plan Monday

I'm back from a fantastic bachelorette weekend with my college girls! We had so much fun camping! It's always so great to spend time with them, we've been out of school for 11 years now and I feel so lucky to still have these wonderful friendships!

Pete and I have been so busy that we are slowing down this week! Last night we enjoyed a yummy meal of Herb Mustard Grilled Pork Chops! We're going to keep it simple and other then Wednesday night, we want to have no plans this week! It feels great! Enjoy your week :)

Monday: Turkey Burgers
Tuesday: BBQ Chicken Pizza
Wednesday: Graze @ Pineland Farms! Looking forward to this night out!
Thursday: Grilled Chicken Sandwiches
Friday: Takeout

iPhoto Friday!

A fun, busy week for the Wescott's! Every week I say we need to slow down but somehow I never say no. Next week I think I'm going to try!
 

1. We went up to Papa & Mame's for dinner and some driveway racing, haha
2. Saturday afternoon we headed back to watch their new shed be delivered and built!
3.Sunday morning we went up to Nonni & Poppi's to visit with Gwen & Allie who were there for the weekend.
4.Sunday night we had a fun family night at Day of Destruction at Beech Ridge.
5.,6. &7. On my birthday, as tradition, I took the boys with my Mom to FuntownSplashtown. Pete and I had a great dinner at the Front Room, followed by drinks at Dry Dock with Cyn & Katelyn.

8.&9. Wednesday The Varney's & Sullivan's came over for pizza and water fun!
10. Yesterday we enjoyed some pool time at Grammy & Grampy's. Peter has become a great swimmer!
11. We ended our evening with a bonfire along with Kyle & Sara.

July 4th!

It was a beautiful day and we spent it on the lake at Nonni & Poppi's!

We started off the morning with special treat of jello, yogurt & blueberries! I had made them for the daycare kids the day before and the boys loved them, so I surprised them with them for breakfast!

Menu Plan Monday

It's a great day....my birthday!!! I have the day off and in keeping with tradition, I'll be taking the boys to Funtown today! My Mom will take them after our fun day and Pete and I will enjoy a nice night out! We have fun coming over for a fun pizza night and the weather is set to be beautiful all week!!! I posted about my cinderblock garden yesterday, can't wait to enjoy my first cucumber from it! Check out my Facebook page so you don't miss a post! Enjoy your week :)
