Menu Plan Monday
Another week of menu planning uninterrupted means no baby yet! I was really hoping I wouldn't be posting this! I am 5 days away from my due date and completely exhausted!! I can't get out of my own way! Pete made hamburger sliders on Saturday night and they were so good, I requested it again for this week! We both enjoyed! Have a great week everyone!
Monday: Shepard's Pie
Tuesday: Ben & Bethany coming for dinner = takeout!
Wednesday: Hamburger Sliders (will post recipe soon)
Thursday: Fettuccine Alfredo
Friday (DUE DATE): Hopefully eating hospital food, haha!

Prep Work
So let the cooking begin! So far I have made spaghetti "IN" turkey meatballs (a daycare favorite), regular meatballs and homemade spaghetti sauce. This afternoon I will be making chili and lasagna roll ups. I have also got to watch part of Toy Story 3 and do a little cuddling with Buna... not many days left that we can enjoy this one on one time!

No baby yet! Some of my MPM fans (Diana) will be happy to see we made it another week! We didn't make tacos last week since I was in the hospital that night and I don't have class this week because of school vacation so we got a full week of planning..... now let's see if we make it to the end of the week with just a family of three :) Have a great week everyone!

A Romantic Dinner for 2 at....
....... the Maine Medical Center Cafe! I went to my 37 week checkup at my doctor's today. I haven't been feeling well the last couple days. I mentioned to the doctor that the baby hadn't been that active today so the put me on a fetal monitor to do a non stress test. After a half hour the baby wasn't moving as much as they would like so they decided to send me into Maine Med for an ultrasound. I called Pete at work and he met me there. They said I was dehydrated and started an iv to pump some fluids in. We also got an ultrasound.... by then the iv had been in for a bit and the baby started being more active. They kept me for a bit on the fetal monitor after the ultrasound, then came in to tell me that everything looked good I just needed to go home to rest and drink lots of water. As we were leaving we stopped at the cafe to eat and enjoyed a nice quiet dinner! Happy Valentine's Day!!

Menu Plan Monday
WARNING: Within the next few weeks Menu Plan Monday will probably fall to the wayside while giving birth and adjusting to life with 2 boys under 2! I promise that it will get back on track as soon I can function properly, haha. This last week I have been feeling completely exhausted and am just trying to get through the day... I have made it to 37 weeks, we are now in the 3 week zone!

Peter's Cars Room!
Pete removed all the wood trim to match the rest of the house which has white trim. He then painted the top part of the room white and the bottom of the room a blue we found at Home Depot called Mountain Spring, I love the color!
All the trim is up and painted white. We put a Cars themed border around the room.
Wednesday night we put together the twin bed and hung the curtains. Peter loved it. He slept in his room for the first time on Thursday night and did get! Slept until 6, which is fine for me. I can get up early no problem as long as I sleep good at night!

Menu Plan Monday
Poor Pete has dealt great with my food aversions during this pregnancy. When talking about the menu this week I told him to pick it all and I would do whatever. Pete is not a big fan of pasta while, I could seriously eat pasta every night, and might as well take advantage of being able to do it while I'm pregnant! So here is menu plan Monday according to Pete!

Chicken Pot Pie
Yum, yum, yum!! Thanks to the Kahn's nanny, Lori, I now have a new favorite recipe! The recipe calls for chicken but due to my food aversion, I left it out and added a few more veggies, highlighted in red, and turned it into a veggie pot pie. The daycare kids loved it as well!
Ingredients
1/3 cup butter
1/3 cup flour
1/3 cup chopped onion
1/3 cup chopped celery
1 package frozen peas & carrots (I used a frozen stew package.. potatoes, carrots, peas,onion)
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups chicken broth
2/3 cup milk
2 1/2 - 3 cups of cut up cooked chicken or turkey
1 package of Pillsbury's pie crust
Directions
Heat oven to 425. Rise frozen veggies to separate, drain. Heat butter in saucepan over medium heat until melted, stir in flour, salt & pepper. Cook, stirring constantly, until mixture is bubbly, remove from heat. Stir in broth & milk, heat to boiling, stirring constantly... add in chicken & veggies. Pour mixture into pie crust bottom. Place top pie crust on. Bake about 35 minutes or until golden brown
